12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

3 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 red bell pepper, diced

1 green bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Season the Shrimp: In a medium bowl, toss the shrimp with Cajun seasoning, ensuring they are evenly coated.

      Sauté the Shrimp: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add 1 tablespoon of olive oil (if needed) and sauté the chopped onion, garlic, red, and green bell peppers for about 5-7 minutes, or until they have softened and the onions are translucent.

          Make the Sauce: Reduce the heat to medium-low and stir in the heavy cream and chicken broth. Allow it to simmer for 3-5 minutes until it slightly thickens.

            Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, use the reserved pasta water to reach your desired consistency.
