Ingredients

4 cups ripe peaches, peeled and sliced (fresh or canned)

1 cup granulated sugar, divided

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1/2 cup unsalted butter (1 stick), melted

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

1 teaspoon vanilla extract

Instructions

Preheat the oven: Start by preheating your oven to 350°F (175°C).

Prepare the peaches: In a large bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Mix well and set aside for about 10-15 minutes to allow the flavors to meld.

Melt the butter: In a 9x13 inch baking dish, pour the melted butter and make sure it's evenly distributed across the bottom.

Make the batter: In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Gradually add the milk and vanilla extract, stirring until just combined. The batter will be slightly lumpy; this is okay.

Assemble the cobbler: Pour the batter over the melted butter without stirring. Then, gently spoon the peach mixture on top of the batter, ensuring the peaches are evenly distributed.

Bake: Place the baking dish in the oven and bake for 40-45 minutes or until the top is golden brown and the cobbler is bubbling.

Cool and serve: Once baked, allow the cobbler to cool for a few minutes. Serve warm, ideally with a scoop of vanilla ice cream or whipped cream on top.
