8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup creamy goat cheese, crumbled

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

½ cup panko bread crumbs

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes to form a roux.

      Add Milk: Gradually pour in the whole milk, continuing to whisk to avoid lumps. Cook the mixture, stirring frequently, until it thickens and comes to a simmer (about 4-5 minutes).

        Incorporate the Cheeses: Lower the heat and add the sharp cheddar, mozzarella, and goat cheese to the thickened milk mixture. Stir until all the cheese has melted and the sauce is smooth.

          Season the Sauce: Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper. Taste and adjust seasoning as needed.

            Combine Pasta and Sauce: Add the cooked elbow macaroni to the cheese sauce and stir until the pasta is well coated.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased 9x13 inch baking dish.
