For the crust and topping:

1 ½ cups all-purpose flour

½ cup rolled oats

½ cup brown sugar, packed

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the filling:

1 cup fresh strawberries, hulled and sliced

1 cup fresh blueberries

1 cup fresh raspberries

¼ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

½ teaspoon ground cinnamon

For finishing:

Powdered sugar for dusting (optional)

Vanilla ice cream for serving (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Prepare the crust: In a medium bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Mix well. Add the melted butter and vanilla extract, stirring until the mixture resembles crumbly sand.

      Set aside 1 cup of the crust mixture for the topping, and press the rest into the bottom of the prepared baking pan to form an even layer. Bake the crust for 10-12 minutes until it's lightly golden. Remove from the oven and let cool slightly.

        Prepare the berry filling: In a large mixing bowl, combine the sliced strawberries, blueberries, raspberries, granulated sugar, cornstarch, lemon juice, and ground cinnamon. Gently toss until the berries are well coated and the mixture is streamlined.

          Layer the filling: Pour the berry mixture over the partially baked crust, spreading it evenly.

            Top with the reserved crust: Sprinkle the reserved crust mixture over the top of the berries, ensuring even coverage.

              Bake: Place the baking pan back in the oven and bake for an additional 25–30 minutes, or until the top is golden brown and the berry filling is bubbly.

                Cool and serve: Allow the cobbler bars to cool in the pan for at least 20 minutes before cutting into squares. Serve warm, dusted with powdered sugar if desired, and pair with a scoop of vanilla ice cream.
