Ingredients

1 cup (2 sticks) unsalted butter, melted

1 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup milk chocolate chips

1/2 cup white chocolate chips

Optional: Sea salt for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar, whisking until smooth. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.

Add the Chocolates: Gently fold in the semi-sweet, milk, and white chocolate chips until evenly distributed throughout the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop heaping spoonfuls of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie to allow for spreading.

Optional Topping: If desired, sprinkle a pinch of sea salt on top of each cookie for an added flavor contrast.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but centers are still a little soft. Avoid overbaking for that gooey brownie texture.

Cool Down: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Serve: Enjoy these decadent triple chocolate brownie cookies with a glass of milk or your favorite beverage!
