2 cups cooked chicken, shredded or diced

1 cup pineapple chunks (fresh or canned, drained)

1/2 cup diced red bell pepper

1/2 cup diced cucumbers

1/4 cup red onion, finely chopped

1/2 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon honey

1/2 teaspoon ground ginger

Salt and pepper to taste

4 large lettuce leaves (Romaine or Butter lettuce)

Optional: sliced avocado and chopped cilantro for garnish

Prepare the Chicken: If you haven’t already, shred or chop your cooked chicken into bite-sized pieces. Place it in a large mixing bowl.

    Mix the Dressing: In a small bowl, combine Greek yogurt, mayonnaise, lime juice, honey, ground ginger, salt, and pepper. Stir until smooth and well-blended.

      Combine Ingredients: Add the pineapple, red bell pepper, cucumbers, and red onion to the bowl with the chicken. Pour the dressing over the mixture and gently fold everything together until well combined.

        Assemble the Wraps: Take a large lettuce leaf and spoon a generous portion of the tropical chicken salad onto the center. If desired, add slices of avocado and a sprinkle of chopped cilantro on top.
