2 tablespoons olive oil

4 tablespoons unsalted butter (divided)

2 cloves garlic (smashed)

2 fresh thyme sprigs

1 tablespoon truffle oil (white or black, based on preference)

For the Frites:

2 large russet potatoes

Vegetable oil (for frying)

Sea salt, to taste

Fresh parsley, finely chopped (for garnish)

For the Truffle Butter:

½ cup unsalted butter (softened)

1 tablespoon truffle oil

1 teaspoon fresh thyme leaves (finely chopped)

Instructions
 

Prepare the Truffle Butter:

    - In a small bowl, combine the softened butter, truffle oil, chopped thyme, and a pinch of salt. Mix until well-blended. Shape into a log, wrap in parchment paper, and refrigerate until firm.

      Prepare the Potatoes for Frites:

        - Peel and cut the russet potatoes into thin sticks (about ¼ inch thick). Soak them in cold water for at least 30 minutes to remove excess starch. Drain and pat dry thoroughly.

          Cook the Frites:

            - In a deep frying pan or fryer, heat vegetable oil to 325°F (165°C). Fry the potatoes in batches until they turn golden and crispy, about 5-6 minutes. Remove them with a slotted spoon and drain on paper towels. Season immediately with sea salt.
