Ingredients

2 cups fresh peaches, peeled and diced

1 package refrigerated pie crusts (2 crusts)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Peaches: In a mixing bowl, combine the diced peaches with a pinch of sugar (optional for extra sweetness) and let them sit for about 10 minutes to release some juices.

Roll Out the Pie Crust: Unroll the refrigerated pie crusts on a lightly floured surface. Using a round cookie cutter or a glass, cut out circles that are about 4-5 inches in diameter.

Fill the Crusts: Place a spoonful of the peach mixture in the center of each crust circle. Be careful not to overfill.

Seal the Pies: Fold the pie crust over the filling to create a half-moon shape. Press the edges together with your fingers or a fork to seal them tightly.

Prepare for Baking: Place the mini pies on a parchment-lined baking sheet. Optional: brush the tops with a little melted butter and sprinkle a bit of sugar for a sweet, golden finish.

Bake: Bake in the preheated oven for 15-20 minutes or until they are golden brown and bubbly.

Cool Down: Allow the mini pies to cool for a few minutes before serving.

Serve & Enjoy: Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream!
