Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup diced bell peppers (any color)

1 cup sliced mushrooms (optional)

1 tsp Worcestershire sauce

1 tsp Dijon mustard

1 tsp paprika

Salt and pepper, to taste

2 cups shredded cheddar cheese

1 can (10.5 oz) cheddar cheese soup

1 cup milk

1 bag (32 oz) frozen tater tots

Optional toppings: pickles, ketchup, mustard, chopped green onions

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, stirring occasionally to break it apart (about 5-7 minutes). Drain any excess grease.

      Sauté Vegetables: Add the diced onion, garlic, bell peppers, and mushrooms to the skillet. Sauté for about 5 minutes, until the vegetables are softened.

        Season the Mixture: Stir in the Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Cook for another 2 minutes until everything is well combined. Remove from heat.

          Prepare the Cheese Mixture: In a large bowl, combine the cheddar cheese soup and milk. Mix until smooth, then stir in 1 cup of shredded cheddar cheese. Carefully fold in the beef and vegetable mixture until well coated.

            Layer Tater Tots: In a greased 9x13 inch baking dish, spread an even layer of the beef and cheese mixture. Top with the frozen tater tots, arranging them in a single layer on top.

              Bake the Casserole: Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.

                Add Final Cheese: Remove from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over the top. Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

                  Serve: Let the casserole cool for about 5 minutes before serving. Optional: Garnish with pickles, ketchup, mustard, and chopped green onions for an extra flavor boost.
