Ingredients

Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

¼ teaspoon salt

Cheesecake Filling:

4 (8 oz) packages cream cheese, softened

1 ¼ cups granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 tablespoon all-purpose flour (optional, for stability)

Zest of 1 lemon (optional, for a citrusy touch)

Topping:

1 cup sour cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Fresh fruit or fruit compote (strawberries, blueberries, or cherries) for garnish

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until thoroughly combined and the crumbs resemble wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring an even layer. Bake for about 10 minutes. Remove from oven and let it cool while preparing the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy.

              - Gradually add in the granulated sugar and vanilla extract, mixing until well combined.

                - Add the eggs one at a time, mixing on low speed just until incorporated. Be careful not to overmix to avoid incorporating too much air.

                  - Blend in the sour cream and optional flour, mixing until just smooth. If using lemon zest, gently fold it into the mixture at this stage.

                    Fill the Crust:

                      - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

                        Bake the Cheesecake:

                          - Bake in the preheated oven for about 55-65 minutes, or until the center is set but slightly jiggly. The outer edges may be firm; this is normal.

                            - Turn off the oven and crack the oven door open, allowing the cheesecake to cool gradually for about an hour. This helps prevent cracks.

                              Chill the Cheesecake:

                                - After cooling in the oven, refrigerate the cheesecake for at least 4 hours, preferably overnight, to set completely.

                                  Prepare the Topping:

                                    - In a small bowl, mix together the sour cream, powdered sugar, and vanilla extract until smooth. Once the cheesecake has chilled, spread this mixture evenly over the top.

                                      Garnish and Serve:

                                        - Top with fresh fruit or fruit compote, if desired. Carefully run a knife around the edge of the springform pan before releasing the sides.

                                          - Slice, serve, and enjoy the ultimate creamy and smooth cheesecake experience!
