1.5 lbs ground beef (or turkey)

1 cup breadcrumbs

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup diced onions

1/2 cup diced bell peppers (any color)

2 cloves garlic, minced

1/4 cup milk

2 large eggs

1 tablespoon Worcestershire sauce

1 tablespoon ketchup (plus extra for topping)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup additional shredded cheese (mozzarella or your choice) for topping

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish or a similar-sized baking dish.

    Prepare the Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, half the cheddar cheese, Parmesan cheese, diced onions, bell peppers, minced garlic, milk, eggs, Worcestershire sauce, 1 tablespoon ketchup, oregano, thyme, salt, and pepper. Mix until everything is well combined.

      Add the Vegetables: Gently fold in the frozen mixed vegetables to the meat mixture until evenly distributed.

        Shape the Meatloaf: Transfer the meat mixture into the greased casserole dish and shape it into a loaf form, smoothing the top.

          Top with Ketchup: Spread the remaining tablespoon of ketchup over the top of the meatloaf for an extra layer of flavor.

            Bake the Casserole: Place the casserole in the preheated oven and bake for 1 hour.

              Add More Cheese: After 1 hour, carefully remove the casserole from the oven and sprinkle the remaining shredded cheese evenly over the top. Return it to the oven and bake for an additional 15 minutes or until the cheese is melted, bubbly, and slightly golden.

                Cool and Serve: Once done, remove from the oven and let it cool for about 10 minutes. Garnish with fresh parsley if desired, then slice and serve warm.
