Ingredients

Dough:

4 cups all-purpose flour, plus more for dusting

1 packet (2 1/4 teaspoons) instant yeast

1/3 cup granulated sugar

1 teaspoon salt

1 cup whole milk, warm (about 110°F)

1/4 cup unsalted butter, melted

2 large eggs

Filling:

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 tablespoons ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (adjust for consistency)

Instructions

Prepare the Dough:

In a large mixing bowl, stir together 4 cups of flour, instant yeast, sugar, and salt. In a separate bowl, whisk together the warm milk, melted butter, and eggs. Pour the wet ingredients into the dry ingredients and mix until a dough begins to form.

      Knead the Dough:

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.

          Make the Filling:

While the dough is rising, combine the softened butter, brown sugar, cinnamon, nutmeg (if using), and salt in a bowl. Mix until well combined.

              Roll Out the Dough:

Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle about 16x12 inches.

                  Add the Filling:

Spread the cinnamon filling mixture evenly over the rolled-out dough. Starting from the longer side, carefully roll the dough into a tight log. Pinch the seam to seal.

                      Slice the Rolls:

Cut the log into 12 equal slices (about 1.5 inches each). Place the rolls in a greased baking dish, leaving some space between them to allow for rising. Cover and let them rise again for about 30-45 minutes.

                          Bake:

Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 20-25 minutes, or until lightly golden on top. Keep an eye on them to prevent over-baking.

                              Prepare the Frosting:

While the rolls bake, make the cream cheese frosting by beating together cream cheese, softened butter, powdered sugar, vanilla extract, and milk in a mixing bowl until smooth and creamy. Adjust the milk for desired consistency.

                                  Frost and Serve:

Once the cinnamon rolls are done baking, let them cool slightly before spreading the cream cheese frosting generously over the warm rolls. Serve immediately and enjoy your ultimate cinnamon rolls!
