Ingredients

1 cup all-purpose flour

1/2 cup sugar

1 tsp baking powder

1/4 tsp baking soda

1/2 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cardamom

1/4 tsp ground cloves

1/4 tsp salt

1/2 cup buttermilk

1 large egg

1/4 cup unsalted butter, melted

1 tsp pure vanilla extract

Oil for frying (vegetable or canola)

1/4 cup powdered sugar (for dusting)

1/2 tsp vanilla bean powder (optional, for extra flavor)

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, ground ginger, ground cardamom, ground cloves, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Gently fold until just combined. Do not overmix; a few lumps are okay.

Prepare for Frying: Heat oil in a deep frying pan or a fryer to 350°F (175°C). The oil should be deep enough to submerge the donut holes.

Shape Donut Holes: Using a small ice cream scoop or your hands, scoop out small balls of batter (about 1 inch in diameter).

Fry Donut Holes: Carefully drop the batter balls into the hot oil, a few at a time. Fry for about 2-3 minutes on each side, or until they are golden brown and puffed up. Make sure not to overcrowd the pan.

Drain: Using a slotted spoon, remove the donut holes from the oil and let them drain on paper towels.

Dust with Sugar: Place the powdered sugar and vanilla bean powder (if using) in a small bowl. While the donut holes are still warm, toss them gently in the sugar mixture until they are evenly coated.

Serve: Enjoy your vanilla chai donut holes warm, paired with your favorite tea or coffee for a delightful treat!
