Ingredients

For the Vanilla Custard:

2 cups whole milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

1 teaspoon pure vanilla extract

3 large egg yolks, lightly beaten

2 tablespoons unsalted butter

For the Crust:

1 1/2 cups all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, softened

1 large egg yolk

1-2 tablespoons cold water, as needed

For Topping:

Fresh berries (raspberries or strawberries)

Mint leaves for garnish

A dusting of powdered sugar

Instructions

Prepare the Crust:

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and use a pastry cutter or your fingers to mix until crumbly. Stir in the egg yolk and enough cold water to form a dough. Press the dough into a greased 9x9-inch baking pan evenly. Prick the surface with a fork to prevent bubbling.

      Blind Bake the Crust:

Bake the crust in the preheated oven for 15-20 minutes or until lightly golden. Remove from the oven and allow it to cool.

          Make the Custard:

In a medium saucepan over medium heat, combine the milk, granulated sugar, cornstarch, and salt. Whisk consistently until the mixture starts to thicken, about 5-7 minutes. Once the mixture begins to bubble, reduce the heat to low.

              Temper the Egg Yolks:

Take a small amount of the hot milk mixture and whisk it into the beaten egg yolks to warm them gradually (this prevents curdling). Slowly add the warmed egg yolks back into the saucepan, whisking continuously until fully combined. Cook for an additional 2-3 minutes while stirring until the custard is thick and glossy.

                  Finish the Custard:

Remove the saucepan from heat and stir in the vanilla extract and butter until thoroughly combined. Let it cool slightly.

                      Assemble the Squares:

Pour the vanilla custard evenly over the cooled crust. Spread it gently with a spatula to ensure an even layer. Cover and refrigerate for at least 4 hours, or until set.

                          Serve:

Once the custard is set, cut into squares. Top each square with fresh berries and a mint leaf. Finish with a light dusting of powdered sugar for an elegant touch.
