12 cannelloni tubes

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon olive oil

1 jar (about 24 oz) marinara sauce (homemade or store-bought)

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Filling: In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, approximately 2-3 minutes. Remove from heat and let it cool slightly.

      Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, egg, cooked spinach, Italian seasoning, salt, and pepper. Stir until well mixed.

        Stuff the Cannelloni: Carefully fill each cannelloni tube with the cheese and spinach mixture. You can use a small spoon or a piping bag for easier stuffing.

          Prepare the Baking Dish: Spread a thin layer of marinara sauce on the bottom of a baking dish to prevent sticking. Arrange the stuffed cannelloni in a single layer on top of the sauce.

            Add Sauce: Pour the remaining marinara sauce over the filled cannelloni, ensuring each piece is well coated. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.

                Serve: Allow the cannelloni to cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot with a side salad or garlic bread.
