Vegetable Spring Rolls with Peanut Sauce

For the Spring Rolls:

10-12 rice paper wrappers

1 cup shredded carrots

1 cup cucumber, julienned

1 cup red bell pepper, thinly sliced

1 cup purple cabbage, shredded

1 cup bean sprouts

1/2 cup fresh mint leaves

1/2 cup fresh cilantro leaves

1 avocado, sliced (optional)

Vermicelli noodles (optional, cooked according to package instructions)

Salt, to taste

Water (for rehydrating the rice paper)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1-2 teaspoons chili garlic sauce (adjust based on heat preference)

1 clove garlic, minced

2-4 tablespoons warm water (to adjust consistency)

Chopped peanuts (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Peanut Sauce: In a bowl, whisk together the peanut butter, soy sauce, hoisin sauce, rice vinegar, chili garlic sauce, and minced garlic. Gradually add warm water, one tablespoon at a time, until you reach your desired dipping sauce consistency. Set aside.

    Prep the Vegetables: Wash and prepare all your vegetables as indicated in the ingredients list. Make sure everything is cut into thin strips for easy rolling.

      Soak the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds or until it softens. Carefully remove it from the water and lay it flat on a clean, damp kitchen towel or a cutting board.

        Fill the Rolls: On the lower third of the rice paper, layer a small handful of the vegetables, two or three mint and cilantro leaves, a few beans sprouts, and a slice of avocado (if using). If using vermicelli noodles, add them on top of the veggies. Be careful not to overfill.

          Roll the Spring Rolls: Start by folding the sides of the rice paper inward over the filling, then roll it tightly from the bottom edge upwards to form a neat cylinder. Repeat until all fillings and rice papers are used.

            Serve: Arrange the spring rolls on a platter. Drizzle them lightly with additional peanut sauce if desired and sprinkle chopped peanuts on top. Serve with lime wedges and extra peanut sauce for dipping.
