For the Summer Rolls:

8 rice paper wrappers

1 cup cooked chicken breast, shredded

1 cup fresh lettuce leaves, roughly chopped

1 cup shredded carrots

1 cup cucumber, julienned

1/2 cup fresh mint leaves

1/2 cup fresh cilantro leaves

1/2 avocado, sliced

1/4 cup vermicelli rice noodles, cooked according to package instructions

1 tablespoon soy sauce (for marinating chicken)

For the Peanut Dipping Sauce:

1/4 cup creamy peanut butter

2 tablespoons hoisin sauce

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon minced garlic

2-3 tablespoons warm water (to adjust consistency)

Prepare the Ingredients: Begin by cooking the vermicelli noodles according to the package instructions. Once cooked, drain them and set aside to cool. Shred the cooked chicken breast and combine with 1 tablespoon of soy sauce to add flavor. Prepare all your fresh vegetables: chop the lettuce, julienne the cucumber, shred the carrots, and slice the avocado.

    Make the Peanut Dipping Sauce: In a small bowl, combine the peanut butter, hoisin sauce, soy sauce, lime juice, and minced garlic. Mix well until smooth. Gradually add warm water, one tablespoon at a time, until you reach your desired consistency. Set aside.

      Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Lay the softened wrapper flat on a clean cutting board or flat surface.

        Fill the Summer Rolls: In the lower third of the rice paper wrapper, layer a small amount of lettuce, shredded chicken, cucumber, shredded carrots, avocado slices, mint leaves, cilantro, and a few vermicelli noodles. Be careful not to overfill; you want them to roll easily.

          Roll the Summer Rolls: Start by folding the bottom of the wrapper over the filling. Then, fold in the sides toward the center. Finally, roll the wrapper away from you tightly, like a burrito. Repeat the process for the remaining rice paper wrappers and fillings.

            Serve: Place the finished summer rolls on a serving plate. Serve them with the peanut dipping sauce. For an extra flavor boost, drizzle with lime juice or sprinkle with crushed peanuts if desired.
