1 cup all-purpose flour

1 cup cornmeal

½ cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup buttermilk

2 large eggs

½ cup unsalted butter, melted

⅓ cup honey

1 teaspoon vanilla extract

¼ cup honey, for drizzling on top

Optional: Fresh corn kernels (1 cup, if desired)

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9-inch round cake pan or an 8x8-inch square baking dish with butter or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, and salt. Whisk until well-combined and there are no lumps.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, melted butter, honey, and vanilla extract until smooth and homogeneous.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold them together until just combined. Avoid overmixing; a few lumps are totally fine. If you’re adding fresh corn, gently fold in the kernels at this stage.
