Viral Sushi Sandwich – A New Way to Enjoy Sushi!

Ingredients
  

2 cups sushi rice

2 ½ cups water

4 sheets nori (seaweed)

1 ripe avocado, sliced

1 cucumber, julienned

1 carrot, peeled and julienned

4 oz crab meat (or sushi-grade fish of choice, e.g., salmon or tuna)

2 tablespoons mayonnaise (preferably Kewpie)

2 teaspoons soy sauce

1 teaspoon wasabi (optional, adjust to taste)

Sesame seeds, for garnish

Black sesame seeds, for garnish

Pickled ginger, for serving

Soy sauce, for dipping

Instructions
 

Cook the Sushi Rice:

    Rinse the sushi rice under cold water until the water runs clear. Combine rice and 2 ½ cups of water in a rice cooker and cook according to the machine’s instructions. If using the stove, bring to a boil, then cover and reduce heat to low for 20 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

      Prepare the Sushi Rice Mixture:

        Once the rice is cooked, transfer it to a large bowl. Mix in a splash of rice vinegar (about 2 tablespoons), a pinch of sugar, and a dash of salt while the rice is still warm. Allow it to cool to room temperature.

          Arrange the Sandwich:

            Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean cutting board. Wet your hands with water to prevent sticking, then take about 1 cup of sushi rice and evenly spread it over the nori, leaving about an inch of space at the upper edge.

              Layer Your Fillings:

                In the center of the rice, create a line of sliced avocado, julienned cucumber, julienned carrot, and crab meat. Drizzle with a little mayo mixed with soy sauce and, if desired, wasabi.

                  Roll the Sandwich:

                    Using the bamboo mat, lift the edge closest to you and begin to tightly roll the sushi sandwich away from you, pressing gently as you go. Be careful not to squeeze out the fillings. Roll until you reach the bare edge of the nori, then wet that edge with a little water to seal the roll.

                      Slice and Serve:

                        Use a sharp, wet knife to slice the roll into bite-sized pieces (about 1-2 inches thick). Repeat with the remaining ingredients to make additional sushi sandwiches. Garnish with sesame seeds and serve with pickled ginger and soy sauce for dipping.
