2 cups rolled oats

1 cup almond flour (or all-purpose flour)

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil (melted) or unsalted butter

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, brown sugar, baking powder, ground cinnamon, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), applesauce, melted coconut oil (or butter), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir until everything is well combined. If using, fold in the chopped nuts and dried fruit at this stage.

          Transfer to Baking Pan: Spread the mixture evenly into the prepared baking pan. Use a spatula to press it down firmly so the bars will hold together.

            Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are lightly golden and the center is set.

              Cool and Cut: Once baked, remove the pan from the oven and allow to cool completely in the pan on a wire rack. Once cooled, use the parchment overhang to lift out the bars, then slice them into squares or rectangles.
