250g Biscoff biscuits (plus extra for decoration)

100g unsalted butter, melted

300g cream cheese, softened

150g white chocolate, melted

100g icing sugar

2 large eggs

200ml double cream

100g Biscoff spread

1 tsp vanilla extract

Instructions
 

Preheat your oven to 160°C (320°F) and grease a 9-inch round springform cake tin.

    Crust Preparation: In a bowl, crush the Biscoff biscuits into fine crumbs. Combine with the melted butter until fully mixed. Press this mixture firmly into the base of the prepared cake tin to form the crust. Chill in the fridge while you prepare the filling.

      Cheesecake Filling: In a large mixing bowl, beat together the softened cream cheese and melted white chocolate until smooth. Gradually add the icing sugar, mixing until well incorporated.

        Incorporate Eggs: Add the eggs one at a time, mixing well after each addition. Then, fold in the double cream and vanilla extract until the mixture is homogeneous and creamy.

          Swirl Biscoff: Take the Biscoff spread and warm it slightly in the microwave (for about 10-15 seconds) to make it easier to swirl. Pour half of the cheesecake mixture into the prepared crust, then drop spoonfuls of the Biscoff spread onto the surface. Use a knife or skewer to create swirls. Pour the remaining cheesecake mixture on top and repeat the swirling process with the remaining Biscoff spread.

            Bake: Place the cheesecake in the oven and bake for approximately 50-60 minutes, or until the edges are set and the centre has a slight jiggle.

              Cooling: Once baked, turn off the oven and leave the cheesecake inside for about an hour with the door slightly open. This helps prevent cracks. Afterward, let it cool to room temperature, then refrigerate for at least 4 hours, or preferably overnight.

                Serve: Before serving, optionally top with crushed Biscoff biscuits and drizzle additional melted white chocolate over the cheesecake for decoration. Slice and enjoy your decadent creation!
