8 oz (225g) white chocolate, finely chopped

½ cup (120ml) heavy cream

2 tbsp Limoncello liqueur

Zest of 1 lemon

1 tsp lemon extract

½ cup (50g) powdered sugar

½ cup (50g) crushed pistachios (for coating)

¼ cup (25g) desiccated coconut (for coating)

Pinch of sea salt

Instructions
 

Melt the Chocolate: In a heatproof bowl, place the finely chopped white chocolate. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer, but not boil. Pour the hot cream over the chopped chocolate and let it sit for about 2 minutes to melt.

    Combine Ingredients: Stir the chocolate and cream mixture until smooth. Then, add the Limoncello, lemon zest, lemon extract, and a pinch of sea salt. Mix well to incorporate all ingredients.

      Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop.

        Form the Truffles: Once the chocolate mixture is firm, use a melon baller or your hands to scoop out small portions (about 1 inch in diameter). Quickly roll them into balls.

          Coat the Truffles: In separate bowls, place crushed pistachios and desiccated coconut. Roll each truffle in either the crushed pistachios or the coconut to coat them evenly.

            Set the Truffles: Place the coated truffles on a parchment-lined baking sheet. Return them to the refrigerator to chill for another 30 minutes before serving to firm up.
