1 pound Italian sausage (sweet or spicy, your preference)

2 tablespoons olive oil

1 large onion, sliced

2 bell peppers (red, yellow, or a mix), sliced into strips

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/2 cup fresh parsley, chopped (for garnish)

1 cup freshly grated mozzarella cheese (optional)

Crusty bread or cooked pasta, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Sausage: In a large oven-safe skillet or cast-iron pan, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, about 7-10 minutes. Break it up into chunks using a wooden spoon while cooking. Once done, remove the sausage from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté until the vegetables are tender, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine and Season: Return the cooked sausage to the pan with the sautéed vegetables. Add the diced tomatoes (with their juice), oregano, basil, red pepper flakes, salt, and pepper. Stir everything together until well combined.

          Bake: Transfer the skillet to the preheated oven and bake uncovered for about 20-25 minutes, or until the mixture is bubbly and slightly caramelized on top. If using, sprinkle the grated mozzarella cheese on top in the last 5 minutes of baking for a delicious melty layer.

            Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley. Serve hot over crusty bread or cooked pasta for a hearty meal.
