Zesty Shrimp and Avocado Salad

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 cups mixed greens (arugula, spinach, or lettuce)

Optional: Crushed tortilla chips for garnish

Instructions
 

Prepare the Shrimp: In a medium bowl, combine the shrimp with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.

    Cook the Shrimp: In a large skillet over medium heat, add the seasoned shrimp. Sauté for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and allow to cool slightly.

      Mix the Dressing: In a small bowl, whisk together the lime juice, a pinch of salt, and pepper to taste. Set aside.

        Combine Ingredients: In a large mixing bowl, combine the diced avocados, cherry tomatoes, chopped red onion, minced jalapeño, and cilantro. Gently toss to mix without mashing the avocados.

          Add Shrimp: Once the shrimp have cooled, add them to the mixing bowl with the avocado and vegetable mixture.

            Dress the Salad: Pour the lime dressing over the shrimp and avocado mixture, gently tossing everything together until well combined.

              Serve: On individual plates or a large serving platter, place a bed of mixed greens. Top with the zesty shrimp and avocado mixture. For extra crunch, sprinkle with crushed tortilla chips if desired.
