2 large flatbreads (store-bought or homemade)

1 cup cooked chicken breast, shredded (preferably rotisserie)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup pepper jack cheese, shredded

1 small red onion, thinly sliced

1 small red bell pepper, diced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1/4 cup sour cream (or Greek yogurt)

2 tablespoons taco seasoning

1 tablespoon olive oil

Juice of 1 lime

Salt and black pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, taco seasoning, and lime juice. Season with salt and pepper to taste. Toss until well mixed.

      Prepare the Flatbread: On a baking sheet lined with parchment paper, place the flatbreads. Brush each flatbread lightly with olive oil.
