1 large cucumber, thinly sliced

1 small red bell pepper, thinly sliced

1 small red onion, finely chopped

1 cup shredded green cabbage

1 jalapeño, seeds removed and finely chopped (optional, for heat)

3 tablespoons apple cider vinegar

2 tablespoons honey or agave syrup

1 tablespoon lime juice
