Zucchini and Feta Bake with Chicken

2 medium zucchinis, sliced into thin rounds

2 cups cooked chicken, shredded (about 2 chicken breasts)

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

3 large eggs

1/2 cup heavy cream

Salt and pepper to taste

Olive oil for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.

    Prepare the Zucchini: In a large bowl, toss the sliced zucchini with a pinch of salt. Let it sit for about 10 minutes to draw out moisture, then pat dry with a paper towel.

      Mix Ingredients: In another bowl, combine the shredded chicken, chopped spinach, crumbled feta, cherry tomatoes, minced garlic, oregano, basil, red pepper flakes, a pinch of salt, and pepper. Stir until evenly combined.

        Layer the Bake: Spread half of the zucchini slices in an even layer at the bottom of the greased baking dish. Then, add the chicken and vegetable mixture on top, spreading it evenly. Finally, layer the remaining zucchini slices over the top.

          Prepare the Egg Mixture: In a separate bowl, whisk together the eggs and heavy cream. Pour the egg mixture over the entire baking dish, ensuring it seeps through to the layers below.

            Top it Off: Sprinkle the grated Parmesan cheese over the top layer of zucchini for a delicious crust.

              Bake: Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the top is golden and the egg has set.
