1 medium zucchini (about 1 cup, grated)

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1/2 cup rolled oats

1/2 cup chocolate chips (or chopped nuts, optional)

1/4 cup shredded coconut (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.

      Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, and salt. Set aside.

        Cream Together Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes using an electric mixer.
