Zucchini Lasagna Roll-Ups

3 medium zucchinis, thinly sliced lengthwise

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg

2 cups marinara sauce (store-bought or homemade)

1 tablespoon chopped fresh basil (plus more for garnish)

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for brushing

Red pepper flakes (optional, for added heat)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin strips (about 1/8 inch thick). You should have around 12-16 strips. Lay them out on a clean kitchen towel, sprinkle them lightly with salt, and let them sit for about 15-20 minutes to draw out excess moisture. Pat them dry afterward.

      Make the Cheese Filling: In a medium mixing bowl, combine the ricotta cheese, 3/4 cup of mozzarella cheese, Parmesan cheese, egg, chopped basil, oregano, salt, and pepper. Mix until well blended.

        Assemble the Roll-Ups: Lay a zucchini strip flat on a clean surface. Spread approximately 2 tablespoons of the cheese mixture along one end of the zucchini strip. Roll it up tightly and place it seam-side down in a lightly greased baking dish. Repeat with the remaining zucchini strips and cheese mixture.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of the baking dish. Arrange the zucchini roll-ups neatly on top of the sauce. Once all the roll-ups are in place, pour the remaining marinara sauce over the top, ensuring all the roll-ups are covered.

            Add Cheese Topping: Sprinkle the remaining 1/4 cup of mozzarella cheese on top of the marinara sauce. If desired, add a pinch of red pepper flakes for some heat.

              Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
