Zucchini & Tomato Gratin with Fresh Basil

3 medium zucchinis, thinly sliced

4 large ripe tomatoes, thinly sliced

1 medium yellow onion, thinly sliced

2 cloves garlic, minced

1 cup fresh basil leaves, chopped

1 cup grated Gruyère cheese (or your favorite cheese)

1/2 cup breadcrumbs (preferably whole wheat)

3 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Vegetables: In a large bowl, combine the sliced zucchinis, tomatoes, and onions. Add minced garlic, chopped basil, olive oil, oregano, salt, pepper, and red pepper flakes if using. Toss everything together until the vegetables are evenly coated.

      Layer the Gratin: In a greased baking dish, start layering the vegetable mixture. Begin with a layer of zucchini followed by tomatoes and onions. Repeat the layers until all the vegetables are used, finishing with a layer of tomatoes on top.

        Add Cheese & Breadcrumbs: Sprinkle the grated Gruyère cheese evenly over the top layer of vegetables. Then, add the breadcrumbs on top of the cheese for a delightful crunch.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15–20 minutes, or until the top is golden brown and bubbly.

            Serve: Allow the gratin to cool for a few minutes before serving. Garnish with additional fresh basil if desired. This dish pairs beautifully with crusty bread or a light salad.
